Dreamsicle cupcake! (vegan)

You can have your ice cream or you can turn your favorite ice cream into cake. Crazy huh? To even better it you can cupcake style that shit. Just sayin' these cupcakes were soo exciting to make I was expecting it to taste excatly like the dreamsicle pop results, it did. I couldn't believe it. :-). It pretty much is just an orange cake (which is dabombdotcom by itself), whipped cream(to get the full effect of the real ice cream)/vanilla buttercream(if you could care less and just want to eat the damn thing because it taste the same), and orange icing(pain in the ass). Of course I went ahead and did the whole thing vegan. I just veganized the recipe. When you veganize a recipe make sure you know what your dealing with and how much you are willing to test and fail. There are many different options to what can be substituted for what depending on what you are wanting from the recipe (i.e. Soft, rough, moist, fluffy..) Plus, make sure you have the best and real extracts you can g
et ahold of. Why? Because when you are baking/cooking anything vegan its not going to have the same appealing taste everything nonvegan has so you gotta up the recipe and give it extracts/spices/herbs or whatever that almost somewhat meet those high taste expectations we want. That's why. The batter was still very light and fluffy and the cake was moist and delicious. Time consuming these are. Worth the time? Yes.

Punk n Cupcakes

Or better known as pumpkin cupcakes. Today I got too excited about Fall actually being here I mean Fall started as of last week, but the weather didn't show it. Today it actually felt like Fall. So, I decided to baked these bad boys up. Bringing Fall in, baking style. One is Pumpkin Chocolate Chip(vegan) and the other is Pumpkin Spice(vegan). For the pumpkin chocolate chip I made a vegan cinnamon icing and for the pumpkin spice I whipped up some vanilla buttercream topped it with some cinnamon. Result? They were bomb style. They were too damn delicious. My roommates almost ate them all before I got out the door. These made me want to pop in one of my fvavorite movies, relax and sip on some hot chocolate.

Snickerdoodle Cupcake 4.0


Why 4.0? I don't know. I just thought it was fancy. If you are a fan of the cookie you will definitely be a fan of this cupcake. I don't know if this even exist until now but I know that this is one awesome, delicious and fun cupcake. This is a chocolate devil food cake with cinnamon butter cream. I think on my next attempt at the snickerdoodle cupcake I will change it up a bit. Instead of a chocolate cake I will try to do a vanilla cake with cinnamon swirled in and possibly a vanilla topping w/ cream of tartar to give it that snickerdoodle tangy kick. For now this is perfect as is.

Pb cupcake > pb cookie

True stuff. Don't mess around with this cupcake. I guess a good name for this cupcake would be peanut butter crunch? Since there is a crunch bar candy baked in the middle of it. I don't know. But I do know that these cupcakes were amazing. They almost fooled me I thought for a second I was eating a cookie instead of a cupcake. Delicious? Of course. I made these last year after Halloween when my roommates and I got sick to our stomaches eating bags of candy for breakfast, lunch, and dinner for about three weeks. :-( I decided instead of throwing it all the candy we still had away why not bake cupcakes add the candy and have cupcakes for breakfast, lunch and dinner for another three weeks. Ha.

Peanut Butter Love Cupcakes (vegan)

These cupcakes are always the life of the party! Whenever I take these anywhere I always get a good response. They rule because peanut butter rules, duh. I don't have a secret recipe or do anything different to make them moist and super good I don't know what makes the peanutbutter taste like the candy cup. So don't bother asking me because I'll just laugh and say I don't know. The truth is I just love baking cupcakes. I guess love? If that would even count.

After watching my favorite movie of all time The Sandlot I realized that I can reinvent the traditional s'more with the gram, chocolate, and mallow. Into a cupcake(vegan). After all I am a beach girl and I do enjoy camping, sometimes. I thought about it I rather be at the beach 99.9% of the time than in some shitty woods. True stuff. So cupcakes do better at a nice day at the beach in the sun than the original gram/chocolate/mallow do at a campfire at night getting bitten by tiny fucking bugs.

Took these babies to a show responses were great. I satisfied a couple of babes and I had fun at the show. So all in all it was a win-win situation. Plus I got a "dang your fancy" which makes me proud. I wish I had took more pictures than this one. A better one with the counter clean and not sprinkled with gram cracker.

Coconut Lime Cupcake [vegan]



I'm really bad at updating this thing. Shoot me. I have a life outside of the internet, sometimes, so judge me. These cupcakes were a so much fun to make. I love how the coconut and lime both bring out each other. Definitely a recipe to try. Especially if your a fan of both. :]
