Carrot Cake Cupcake (Vegan)

First of all, how are you suppose to decorate a carrot cake cupcake? I don't know. So, if I did it wrong then that sucks for you to see. I seen a couple of decorated carrot cakes in my time but really is putting a butter cream carrot on a carrot cake really original? I'm all about being original, creative & unique. So, I said Fuck the butter cream I'm going to put some real carrot shavings along with a cream cheese topping. I like the way these came out they look absolutely cute. Aside from looking cute they are greatly pleasing, they have a rich flavorful taste. I didn't know walnuts & raisins were in carrot cake. shoot me. So, I was afraid I wasn't going to like it at all. But I did. I am fully satisfied with the outcome of these cupcakes. They rule. Don't read me all wrong now I love walnuts & raisins I just didn't know I was going to love them in carrot cake. The funny thing about this recipe is you can totally switch up the vegetables used in it & get zucchini, banana, or some other vegetable cake out there. So, that's another reason why it rules. But for now we are talking carrot cake cupcakes. I haven't had Carrot cake in forever and a day. Today I decided it was carrot cake cupcake day. I did it. Even though I had a long & stressful day and I still have homework I forgot to finish due tomorrow morning. I still make time to bake. Any excuse to bake cupcakes is a perfect excuse, duh.

Halloween

is close. 14 more days and the excitement begins. Well, I think it already started in my house and the excitement is just getting higher as time is going by and the days are counting down. Too stoked for Halloween, its my favorite. Every year I attempt to make sugar Halloween cookies but always fail. I think I'll stick to Cupcakes, its in my blood. These cupcakes were from last year for my little sisters classroom party. How fucking cool was she? taking these cute, delicious & vegan cupcakes to class. Dang, I wish I was as cool at nine years young as her. I wasn't, I still haven't even reached the line of cool. It happens. This years Halloween cupcakes have to top last years. I know I can come up with something amazing. This year for Halloween is crazy cupcake baking. I got a few orders in for parties. Whaaaaaaaat? I'm excited. :) Staring back at these pictures makes me more excited about getting to bake these orders. Plus, I get to add more blog entries to this site which is a bonus.

Lemon Cupcakes (Vegan)

Even though it might be Fall, I think we are still living the Summer days. Yes, it might not reach 106 anymore but it still reaches the high 80's what kind of Fall does that? California Fall, duh. Well, not all of California I guess just the central valley. So, if you don't experience these hot Fall days, I'm jealous of you. Since the sun doesn't want to leave the central valley to let the rain, clouds and thunderstorms have their turn. I thought I would keep it summer time and bake these awesome lemon cupcakes. I mean really can you drink ice cold lemonade in winter? yeah, you can but for some reason Summer & lemons complement each other. Plus it just wouldn't feel right its like having hot coco on a cold winter day. Its better that way. You don't want to drink hot coco in 109 degrees weather, do you? Weirdo. So, since its still hot out I thought this lemon delight would go just right with these lacking Fall days. Its not like I'm selling out to Fall and making ice cold lemonade, yet. I mean C'mon they are just cupcakes. Deal with it. These cupcakes were soo yummy. Whenever I bake any I usually don't eat more than one, but I think lemon cake might be my new favorite to make and eat. Sorry Funfetti, I still love you.

Apparently I rock cupcakes.

Whatever that means..I guess you have to be nine years old to understand it. The best gifts are homemade gifts. Especially if the gift is a drawing on a tissue with color gel pens. I have an awesome & cute baby sister. Everything I get from her involves cupcakes, she's soo cute. Ha ha. Tomorrow I will post a baked good. Tonight I'm neck deep with homework, I can't wait for this semester to be over. Ugh.

Brooklyn invades Brownie and ends up in Cupakes or Brooklyn brownie cupcakes (vegan)

Frosting these babies & you are just doing too much. I'm not about doing too much on rainy days. I'm pretty content with these brownie like cupcakes. Leaving them unfrosted wasn't a bad choice. I was going to mix it up with some pumpkin but I got lazy. Rain lzy dayz. These pictures don't do much justice to how these really look. They are cuter in real life trust me. I need to buy an actual camera and not my camera phone to take pictures. I'm sure I will get bank soon & start uploading better pictures for now suck it up, shut up and deal with it.

Basic Cupcakes (Vegan)

Cupcakes can get as basic as your want them. Today I seen a lady at the store with tons of cupcake liners, decorating sprinkles and tons of cake box mix. I was only assuming she was going to go home to bake up some cupcakes for her kid(s) to take to school? Possibly a birthday party? or maybe she wanted to just have a damn cupcake. I have no memories of my mom ever baking me a cake for school/birthday parties. She wasn't into baking. She always had to work and I understand. I'm not complaining. Weird. I don't know how I got this crazy crave for baking and loving it. I don't bake from boxes, I do all my baking from scratch.(just so there is no confusion). So back to the lady at the store. I am pretty sure she wasn't going for just a basic cupcake with all those decorating supplies but who knows people are weird and go apeshit crazy at stores buy tons of useless bullshit and don't use anything they bought but instead use what already had. I've done it before I'm not going to type here and lie. Its true. See picture above. I went out bought a shit load of cute cupcake liners, sprinkles, and food coloring. I ended up making and using a chocolate cupcake recipe, chocolate butter cream, crushed cookies I stole from my roommate, sprinkles my little sisters had brought over once and never took home and sprinkles from Vday. It happens.
